Lemon Waffles with Rosemary Blackberry Syrup




Lemon Waffles with Rosemary + Blackberry Syrup

Waffle Batter:

2 c. flour

1 tbs. sugar

4 tsp. baking soda

1/4 tsp. salt

3/4 tsp. vanilla extract

2 eggs

1/2 cup vegetable oil

1 3/4 c. milk

1 tsp. fresh lemon zest


1 package fresh blackberries

juice from 1 lemon

1/2 to 1 tsp. fresh rosemary, chopped

1/2 cup sugar

1/2 cup water

To make:

For the waffles, mix dry ingredients. Whisk in wet ingredients just until combined. Bake waffles according to waffle maker directions – err on the side of slightly more crispy.

For the syrup: bring water, sugar, lemon juice and rosemary just to a boil, remove from heat. Pour hot mixture over rinsed blackberries and fold gently. The heat from the syrup will soften the berries without cooking them so much that they lose their texture

Top waffles with berry syrup and powdered sugar. Enjoy!
